摘  要:无酸发酵复合酶是一种新型高效生物复合酶制剂,作用时间长,抗药性小。能有针对性杀灭和抑制产生起酒精生产过程中产酸对发酵有害的杂菌,而对生产酒精酵母没有任何影响,是一种专为提高抑菌效果及原料利用率,同时由于发酵pH的提高,促进酵母代谢,提高酒精度,降低成熟醪残糖,减少有害废水排放。可以完全替代硫酸的使用,防止因使用硫酸导致的管壁结垢,延长生产设备使用寿命,从而达到无酸发酵的目的。Acid-free fermentation compound enzyme is a new high-efficient biological compound enzyme preparation,which has long action time and low drug resistance.It can specifically kill and inhibit the heterobacteria that produce acid in the process of alcohol production,which is harmful to fermentation,but has no effect on the yeast producing alcohol.It is designed to improve the antibacterial effect and the utilization rate of raw materials.At the same time,due to the increase of fermentation pH,it can promote the metabolism of yeast,improve the alcohol content,reduce the residual sugar of mature mash,and reduce the discharge of harmful wastewater.It can completely replace the use of sulfuric acid,prevent the pipe wall scaling caused by the use of sulfuric acid,extend the service life of production equipment,so as to achieve the goal of acid-free fermentation.
