摘  要:本试验旨在研究饲粮添加一水肌酸(CMH)对宰前运输应激黔东南小香鸡血液指标、肉品质及肌肉糖酵解的影响。试验选择150日龄、体重相近健康的黔东南小香鸡160羽,随机分成4个组,每组20个重复,每个重复2只。A组和B组饲喂基础饲粮,C组和D组分别在基础饲粮中添加0.06%和0.12%的CMH。试验期为14 d。试验结束当天,A组不做运输应激处理,B组、C组和D组进行3 h宰前运输应激处理。结果表明:1)饲粮添加CMH对黔东南小香鸡平均日增重、平均日采食量及料重比均无显著影响(P>0.05)。2)与A组相比,B组的血清皮质酮含量显著增加(P<0.05),血清葡萄糖含量显著降低(P<0.05),胸肌pH24 h、糖原含量显著降低(P<0.05),胸肌亮度(L∗)值、滴水损失、蒸煮损失、乳酸含量及糖酵解潜力显著增加(P<0.05),胸肌丙酮酸激酶、己糖激酶和果糖-2,6-二磷酸酶活性显著增加(P<0.05)。3)与B组相比,D组的血清葡萄糖含量显著增加(P<0.05),血清皮质酮含量显著降低(P<0.05),胸肌pH24 h和糖原含量显著增加(P<0.05),胸肌丙酮酸激酶、己糖激酶和果糖-2,6-二磷酸酶活性显著降低(P<0.05),胸肌L∗值、滴水损失、蒸煮损失、乳酸含量及糖酵解潜力显著降低(P<0.05)。综上所述,饲粮添加0.12%的CMH缓解了黔东南小香鸡运输应激,在一定程度上有效抑制了运输应激引起的肌肉糖酵解,对宰前运输应激黔东南小香鸡肌肉品质有一定的改善作用。The purpose of this experiment was to study the effects of dietary creatine monohydrate(CMH)on blood indexes,meat quality and muscle glycolysis of Qiandongnan Xiaoxiang chickens subjected to pre-slaughter transportation stress. A total of 160 healthy 150-day-old Qiandongnan Xiaoxiang chickens with similar body weight were randomly divided into 4 groups with 20 replicates per group and 2 chickens per replicate. Chickens in group A and group B were fed basal diets,and broilers in group C and group D were fed basal diets supplemented with 0.06% and 0.12% CMH,respectively. The experiment lasted for 14 days. At the end of the experiment,broilers in group A were treated with no transportation stress,and broilers in group B,group C and group D were treated with 3 h pre-slaughter transportation stress. The results showed as follows:1)dietary CMH had no significant effects on the average daily gain,average daily feed intake and the ratio of feed to gain of Qiandongnan Xiaoxiang chickens(P>0.05). 2)Compared with group A,the serum corticosterone content of group B was significantly increased(P<0.05),the serum glucose content was significantly decreased(P<0.05),the breast muscle pH24 hand the glycogen content were significantly decreased(P<0.05),the lightness(L*)value,drip loss,cooking loss,lactic acid content and glycolysis potential in breast muscle were significantly increased(P<0.05),and the activities of pyruvate kinase,hexokinase and fructose-2,6-diphosphate in breast muscle were significantly increased(P<0.05). 3)Compared with group B,the serum glucose content of group D was significantly increased(P<0.05),the serum corticosterone content was significantly decreased(P<0.05),the breast muscle pH24 hand the glycogen content were significantly increased(P<0.05),the activities of pyruvate kinase,hexokinase and fructose-2,6-diphosphate in breast muscle were significantly decreased(P<0.05),and the L* value,drip loss,cooking loss,lactic acid content and glycolysis potential in breast muscle were significantly decreased(P<0.0
