摘  要:随着人们对健康的关注度逐渐提高,食源性小分子蛋白作为无毒、安全且高效的活性物质被广泛研究。食源性小分子蛋白种类丰富,根据其原料来源可分为动物源、植物源及微生物源性小分子蛋白。国内外学者发现食源性小分子蛋白通过免疫器官、免疫细胞、免疫活性物质三个层面发挥抗菌、抗癌、抗炎等生理功能,可以显著提高生物机体健康水平。食源性小分子蛋白具有吸收快、易取材、高效性等优点,已被广泛应用于各个领域中,具有广阔的发展前景。通过介绍食源性小分子蛋白的种类、作用机制以及对生物机体健康的影响,综述其在畜牧、保健、医药、食品领域的应用,并对食源性小分子蛋白未来发展趋势进行展望,以期为健康生活、提供优质畜产品提供新的思路。With increasing attention to human health,food-derived small molecule proteins have been widely recognized as non-toxic,safe and highly active substances.Food-derived small molecule proteins have a wide range of sources.According to their raw material sources,they can be divided into animal,plant and microbial based proteins.Scholars at home and abroad have discovered that food-derived small molecule proteins have antibacterial,anti-cancer,and anti-inflammatory functions in three areas of immune organs,immune cells,and immune active substances.Therefore,it can significantly improve biological organisms’health.Food derived small molecule proteins have the advantages of fast absorption,easy access to materials,and high efficiency.They have been widely used in various fields and have a great potential.This paper introduces types,mechanisms and effects of food-derived small molecule protein on the health of biological organisms,reviews their applications in the fields of animal husbandry,health care,medicine,and food as well as future development trends.The study provides some new ideas of making high-quality animal products for people’s better life.
