摘 要:以新收获的粤农丝苗、黄华占、郢香丝苗、隆两优534、荃优鄂丰丝苗、虾稻1号为原材料,置于35℃培养箱中,每隔20 d检测一次,比较6个籼稻品种在高温储藏条件下品质指标的变化及其相关性。结果表明,稻谷高温储藏60 d,脂类物质显著降低,脂肪酸值、电导率和丙二醛含量等敏感性指标升高。脂肪酸值、丙二醛、电导率三个指标相互之间全部呈正相关,丙二醛、电导率、脂肪酸值三个敏感性指标分别与各个脂类物质(淀粉脂、非淀粉脂)含量呈负相关,淀粉脂和非淀粉脂含量呈正相关。The newly harvested Yuenong silk seedling,Huanghuazhan,Yingxiang Simiao,longliangyou 534,Quanyou efeng silk seedling and Xiadao 1 were used as raw materials,sealed in 35℃incubator with PE self sealing bags,and tested every 20 days to compare the changes and correlations of quality indexes of 6 indica rice varieties under high temperature storage conditions.The results showed that when rice was stored at high temperature for 60 days,lipids were significantly reduced,and sensitive indicators such as fatty acid value,electrical conductivity and MDA content increased.The three sensitive indicators are all positively correlated with each other,and they are negatively correlated with the content of each lipid substance(starch lipid,non-starch lipid),The content of starch fat and non-starch fat is positively correlated.
