摘  要:双歧杆菌作为婴幼儿肠道的优势菌,是最常用的益生菌之一,但对氧气具有高度敏感性,因而双歧杆菌的分离、培养和应用面临较大困难。利用双歧杆菌选择培养基,从湖南采集的健康人的母乳中分离出19株乳酸菌。鉴定结果显示,其中7株双歧杆菌分别为1株长双歧杆菌(Bifidobacterium loungum)、2株两歧双歧杆菌(B.bifidum)和4株短双歧杆菌(B.breve)。长双歧杆菌S1和短双歧杆菌S3在pH 2.5的人工胃液中耐受性较好;短双歧杆菌S3在0.1%胆盐中存活率较高,达到75.50%;短双歧杆菌S3和S11在液体培养基中非厌氧条件下培养时的生长能力较强。短双歧杆菌S3有望作为一株优良的益生菌株,应用于双歧杆菌相关产品的开发。As a group of anaerobic bacteria in the human intestinal tract,bifidobacteria are highly sensitive to oxygen,which brings great difficulties to the separation,culture and application.In this study,19 strains of lactic acid bacteria were isolated from the breast milk of healthy humans collected in Hunan.Among them,7 Bifidobacterium strains included 1 strain of B.loungum,2 strains of B.bifidum and 4 strains of B.breve.The tolerance bifidobacteria to artificial gastric juice and bile salt was studied,and the oxygen tolerance of Bifidobacteria in liquid culture was measured.The results showed that strains S1 and S3 were well tolerated in pH 2.5 artificial gastric juice,S3 had a high survival rate of 75.50%in 0.1%bile salt,and S3 and S11 had a high oxygen tolerance in liquid culture.Strain S3 was expected to be an excellent beneficial strain and could be applied to the development of bifidobacteria-related products.
