摘  要:为了研究江西省丰城市富硒地区常食辣椒中的硒含量及形态,选取具有代表性的几种常食辣椒为试验对象,采用湿法消解和pH为8.6的三羟甲基氨基甲烷-盐酸(Tris-HCL)处理样品,利用氢化物原子荧光法测定辣椒中总硒、无机硒及有机硒含量。结果表明:丰城市富硒地区生产的辣椒总硒含量在0.026~0.046mg/kg,无机硒含量在0.010~0.015mg/kg,有机硒含量在0.018~0.041mg/kg,符合富硒食品的标准,而购于超市的几种本地辣椒硒含量明显低于天然富硒地区。To research the selenium contant and its existing form in peppers that we often eat in Fengcheng of Ji⁃angxi province as being considered rich selenium area,different varieties peppers was selected as experimental ob⁃ject,these samples were processed by the wet digestion and pH 8.63 hydroxymethyl aminomethane-hydrochloric ac⁃id Tris-(HCL),and were determined by using hydride atomic fluorescence determination.The results showed that the contents of total selenium,inorganic selenium and organic selenium were 0.026~0.046mg/kg,0.010~0.015mg/kg and 0.018~0.041mg/kg,which were in line with the standard of selenium-rich food.The contents of selenium in some local peppers purchased in supermarkets were significantly lower than those in natural selenium-rich areas.
