摘  要:竹盐具有养生及保健的作用,广泛应用于生活用品、民间医药及保健辅助用品等领域。实验以云南高原深井原盐为原料,选择楠竹为载体,采用高温烘焙的方法制备竹盐。采用原子吸收分光光度计(AAS)、电感耦合等离子体发射光谱仪(ICP-OES)、碳硫分析仪、扫描电镜(SEM)、酸度计和电导率仪分别对原盐和竹盐产品的矿物质元素富集行为、微观晶体结构形态、电导率和酸碱度的变化规律进行表征。结果表明,随着竹盐烧制段数的增加,在Ⅰ至Ⅷ段竹盐中,有益矿物元素钙、镁、磷、钾、铁均在不断富集,钠和硫元素的含量则降低。Ⅰ、Ⅲ、Ⅴ、Ⅷ段竹盐的氯化钠晶体直径逐渐变小,Ⅷ段竹盐的晶体直径分布在30~40μm,比原盐更小,使竹盐不易结块,并且Ⅷ段竹盐的氯化钠颗粒间隙大,具有更好的分散性。酸碱度和电导率分析表明,在相同浓度下,溶液pH值随着竹盐段数增加而升高。在5.0%浓度的NaCl溶液中,Ⅷ段竹盐的pH值最高,达到9.8,呈现碱性特性;在0.2%浓度时,Ⅷ段竹盐的电导率高于其他段数竹盐,而在1.0%、5.0%浓度下,其电导率与其他段数竹盐相差不大或低于其他段数竹盐。Bamboo salt has the function of health care,and it is widely used in the fields of daily necessities,folk medicine and health care auxiliaries.In order to better explore its preparation technology,the deep well salt of Yunnan plateau was used as raw material,and Phyllostachys pubescens was selected as carrier to prepare deep wall bamboo salt by high temperature baking.Atomic absorption spectrophotometer(AAS),inductively coupled plasma emission spectrometer(ICP-OES),carbon and sulfur analyzer,scanning electron microscope(SEM),pH meter and conductivity meter were used to characterize the mineral element enrichment behavior,microscopic crystal structure,electrical conductivity and pH of raw salt and bamboo salt products respectively.The results show that with the increase of the number of bamboo salt firing section,the beneficial mineral elements Ca,Mg,P,K and Fe are continuously enriched in bamboo salt from stageⅠto SectionⅧ,while the concents of Na and S decrease.Ⅰ,Ⅲ,Ⅴ,Ⅷperiod of bamboo salt of sodium chloride crystal diameter became smaller,Ⅷperiod of bamboo salt crystals distribution between 30~40 microns in diameter,than the impurities in smaller and has better dispersion,sodium chloride andⅧperiod of bamboo salt particles clearance is big,the bamboo salt is not easy to agglomerate.pH value and conductivity analysis shows that under the same concentration,solution pH value with the increase number of bamboo salt increases,and when the concentration of 5.0%,Ⅷperiod of bamboo salt had the highest pH 9.8,presents the basic features;In the concentration of 0.2%,Ⅷsegments of the electrical conductivity of bamboo salt is higher than other several bamboo salt,and in the concentration 1.0%,5.0%,the conductivity and other segments of bamboo salt were similar or lower than other several bamboo salt.
