摘  要:目的总结食品药品中N-亚硝基二甲胺(NDMA)检测方法的研究进展。方法通过梳理食品和药品中NDMA的由来,总结食品和药品现行标准中传统检测方法及新型分析技术。结果NDMA的检测方法包括超临界流体色谱法、离子色谱法、高效液相色谱法、液相色谱-质谱法、气相色谱法、气相色谱-热能分析法、气相色谱-质谱法及其他。结论现行标准中传统检测方法优缺点各异,新方法、新技术用于食品药品中NDMA的定性和定量分析,可为我国食品药品监管部门提供技术支持,切实保障民众的饮食及用药安全。Objective To summarize the research progress of inspection methods of N-nitrosodimethylamine(NDMA)in food and drugs.Methods By combing the origin of NDMA in food and drugs,the traditional inspection methods and new analytical techniques in the current standards of food and drugs were summarized.Results The inspection methods of NDMA included supercritical fluid chromatography,ion chromatography,high-performance liquid chromatography(HPLC),liquid chromatography-mass spectrometry,gas chromatography,gas chromatography-thermal energy analysis,gas chromatography-mass spectrometry and other methods.Conclusion The traditional inspection methods in the current standards have different advantages and disadvantages.The application of new methods and technologies in the qualitative and quantitative analysis of NDMA in food and drugs can provide technical support for China’s food and drug regulatory authorities and effectively ensure the safety of food and drug use.
