不同羽色儋州鸡鸡蛋品质、营养成分和激素含量的比较分析

摘　　要：该试验对较受消费者欢迎的2种羽色(麻羽、黑羽)儋州鸡鸡蛋的蛋品质、营养成分和激素含量进行比较分析。研究表明:2种羽色儋州鸡鸡蛋在蛋重、蛋形指数、蛋壳强度、蛋壳厚度和哈氏单位等方面指标均无显著差异(P>0.05);黑羽儋州鸡鸡蛋的蛋白高度高于麻羽儋州鸡,差异极显著(P<0.01);麻羽儋州鸡鸡蛋的蛋黄比率高于黑羽儋州鸡,差异显著(P<0.05);2种羽色鸡蛋的常规营养成分(粗灰分、粗蛋白、粗纤维和粗脂肪)、常量元素(钙、磷)和胆固醇、生长激素、瘦素、胰岛素等激素含量均无显著差异(P>0.05);麻羽儋州鸡鸡蛋蛋清中卵磷脂含量高于黑羽品系,差异显著(P<0.05);麻羽儋州鸡鸡蛋蛋清中雌二醇和孕酮含量高于黑羽品系,差异极显著(P<0.01)。结果表明,两种羽色儋州鸡蛋品质和营养价值基本一致。This study compared the quality,nutrition composition and hormone content of eggs of two breed of popular Danzhou chicken with different feather colors(flaxen feather or black feather).The result showed that there was no significant difference in egg weight,egg shell index,egg shell intensity,egg shell thickness and haugh unit(HU)for eggs of Danzhou chicken with two different color feather(flaxen feather and black feather)(P>0.05);the albumin of black feather Danzhou chicken was significantly higher than that of flaxen feather Danzhou chicken(P<0.01);the egg yolk ratio of flaxen feather Danzhou chicken was higher than that of black feather Danzhou chicken(P<0.05);the routine nutrients(crude ash,crude protein,crude fiber,crude fat),macroelement(Ca,P)and the hormone including cholesterol,growth hormone,leptin and insulin of the two breeds were insignificantly different(P>0.05);the lecithin content in egg white was higher than that of black feather Danzhou chicken(P<0.05);the estradiol and progesterone contents in egg white were significantly higher than that of black feather Danzhou chicken(P<0.01).The results suggested that the quality and nutritional value of the eggs between two breeds of Danzhou chicken are basically the same.
