摘　　要：叶绿素铜钠盐是一种安全性和稳定性高,且有一定生理功能的水溶性绿色色素,本文对其结构、性质、功能应用、制备方法等方面进行了概述,另外提出了目前制备叶绿素铜钠盐工艺中存在的问题以及改进的方法,为其进一步研究和相关产品的开发提供理论依据。Sodium copper chlorophyll is a water-soluble green pigment with high safety and stability and certain physiological functions.This article summarizes its structure,properties,functional applications,preparation methods,etc.,and proposes of the current preparation of sodium copper chlorophyll the problems and the improved methods,which provides a theoretical basis for its further research and the development of related products.
