摘 要:为改善高温季节所制大曲的质量问题,研究了高温季节冷却水拌料对曲块挂衣占比和成品曲质量的影响。结果表明,在28~32℃之间,利用冷却水拌料曲块挂衣占比由原来13%提高到97%,放门曲温度整体上提高1℃,出房曲糖化力提高46.25 mg/g·48 h,优等曲占比由原来25%提高到65%,出房曲综合质量显著提升。In order to improve the quality of Daqu produced in high-temperature seasons,the effects of blending raw materials with cold water on the percentage of mould-coating over the surface of Daqu and the quality of the finished Daqu were studied.The results showed that,when the environment temperature was 28℃to 32℃,blending raw materials with cold water could increase the per-centage of mould-coating over the surface of Daqu from 13%to 97%,increase the temperature of Daqu in the culturing room by 1℃,and increase the saccharifying power of the finished Daqu by 46.25 mg/g·48 h.The proportion of excellent Daqu increased from 25%to 65%,and the comprehensive quality of the finished Daqu improved significantly.
