摘  要:试验旨在研究不同水平的载铬纳米壳聚糖(CNP-Cr)对肥育猪生长性能、胴体品质和肉品质的影响。选择120头平均体重为65 kg的杜×长×大三元杂交猪,随机分为4组,分别饲喂含0、100、200、400μg/kg CNP-Cr(以铬含量计)的饲粮,预试期5 d,正试期35 d。结果显示:与对照组相比,饲粮添加100、200、400μg/kg CNP-Cr对肥育猪日增重、日采食量和耗料增重比无显著影响;200μg/kg CNP-Cr组瘦肉率提高了8.23%(P<0.05),3个试验组背膘厚和脂肪率均较对照组降低(P<0.05),200、400μg/kg CNP-Cr组眼肌面积增加(P<0.05),肌肉滴水损失下降(P<0.05);3个试验组肌肉中肌红蛋白含量均升高(P<0.05);200μg/kg CNP-Cr组血清中游离脂肪酸含量和总蛋白含量均高于对照组和100μg/kg CNP-Cr组,试验组血清尿素氮含量有下降趋势(P>0.05),葡萄糖水平较对照组降低(P<0.05);200、400μg/kg CNP-Cr组血清脂肪酶活力升高(P<0.05),3个水平的CNP-Cr使脂肪中激素敏感脂肪酶活性升高(P<0.05),而脂肪合成酶活性降低(P<0.05)。结果提示,CNP-Cr可影响机体葡萄糖和脂肪代谢,从而影响胴体组成和肌肉品质,以200μg/kg剂量组效果为佳。The research was conducted to study the effects of different levels of CNP-Cr on growth performance,carcass characteristics,meat quality in finishing pigs.A total of 120 crossbred pigs(Duroc×Landrace×Yorkshire)with initial body weight of 65 kg were randomly divided into four groups,each group with three pens,six pigs per pen.Pigs were fed on the same basal diet supplemented with 0(control),100,200,400μg/kg Cr from Chitosan nanoparticles loaded with chromium ions(CNP-Cr)for 35 days.The results showed that supplementation of CNP-Cr did not significantly influence average daily gain,average feed intake and feed conversion rate(P<0.05).CNP-Cr at 200μg/kg enhanced carcass lean ratio by 8.23%(P<0.05).The back fat thickness and carcass fat ratio of the three treatment groups were significantly lower than control group(P<0.05),the longissimus muscle area and drip loss were significantly increased in pigs fed with diets supplemented with 200 and 400μg/kg CNP-Cr(P<0.05),and the myoglobin content in the muscles of the pigs in the three treatments was significantly increased(P<0.05).The levels of free fatty acid and total protein in 200μg/kg CNP-Cr group were significantly higher than those in control group and the 100μg/kg CNP-Cr group.The concentration of serum urea nitrogen in pigs fed with diets supplemented CNP-Cr showed a downward trend,and the glucose level was significantly decreased by CNP-Cr supplementation(P<0.05).CNP-Cr at 200 and 400μg/kg significantly increased serum lipase activity,and HSL activity in the fat of the treatments significantly increased and the FAS activity decreased significantly compared with control group(P<0.05).The results indicated that CNP-Cr could influence glucose metabolism and fat metabolism,consequently affect carcass composition and muscle quality.200μg/kg CNP-Cr is recommended as the optimal supplemental level.
