中国连锁餐饮业理性变革期的成长特征及未来发展趋势

摘　　要：连锁餐饮是餐饮业发展到一定程度的必然产物。经过三十余年的发展,中国连锁餐饮业经历了三个成长阶段。运用SCP模型,嵌入五力模型和钻石模型融合所形成的成长因素,形成特征分析框架,发现中国连锁餐饮业在理性变革期呈现出与导入形成期、快速发展期不同的独特的成长演进特征。Chain restaurant is the inevitable outcome of the development of catering industry to a certain extent.After more than 30 years of development,China's chain restaurant industry has gone through three different growth stages.Using SCP model,embedding the growth factors formed by the integration of five-force model and diamond model,forming a characteristic analysis framework,it is found that the Chinese chain restaurant industry has a unique growth and evolution characteristics in the period of rational transformation,which is different from the period of introduction and rapid development.
