摘 要:在pH=7.40的实验条件下,采用荧光光谱法和分子对接法研究了食用合成色素日落黄与溶菌酶分子之间的作用机制。结果表明:日落黄能够以静态猝灭形式有效地猝灭溶菌酶的荧光,形成1∶1复合物。热力学结果表明:日落黄-溶菌酶体系主要作用力类型为疏水作用力和氢键,分子对接也说明了这个观点。同时,分子对接实验还表明结合位点位于溶菌酶活性中心附近。通过对日落黄-溶菌酶体系建立结合率模型,可以预测结合作用会对溶菌酶的抗炎杀菌功能产生影响。The interaction between sunset yellow and lysozyme was studied by fluorescence spectroscopy and molecular docking at pH=7.40.The results showed that sunset yellow could effectively quench the fluorescence of lysozyme in the form of static quenching and formed a complex at 1∶1.Thermodynamic results showed that the main interaction types of sunset yellow lysozyme system were hydrophobic force and hydrogen bond.Molecular docking also showed the same view.At the same time,the molecular docking experiment also showed that the binding site was located near the lysozyme active center.By establishing the binding rate model of sunset yellow lysozyme system,it could be predicted that the binding effect will affect the anti-inflammatory and bactericidal function of lysozyme.
