摘 要:为比较不同家系中华绒螯蟹幼蟹营养成分与营养价值之间的差异,选取育种群体中的2种家系,测量了其概略养分、氨基酸组成与含量和矿物元素含量。结果显示,红壳蟹家系的粗蛋白含量显著高于青壳蟹家系(P<0.05),其他常规成分无显著差异。试验测定了17种氨基酸含量,红壳蟹家系幼蟹谷氨酸含量较高,为2.13%,胱氨酸含量最低,为0.17%。青壳蟹家系幼蟹的天冬氨酸、丝氨酸、谷氨酸、苏氨酸、缬氨酸、亮氨酸、酪氨酸、苯丙氨酸、赖氨酸、组氨酸和精氨酸含量均显著低于红壳蟹家系(P<0.05)。2种家系幼蟹的丙氨酸、胱氨酸、蛋氨酸、异亮氨酸和脯氨酸的含量没有显著差异。红壳蟹家系的氨基酸、必需氨基酸和非必需氨基酸总量均高于青壳蟹家系。2种家系幼蟹肌肉的4种常量元素没有显著差异,微量元素中铁、锰、铜、锌、硒和铅含量差异不显著。提出,红壳蟹家系幼蟹营养价值高于青壳蟹家系幼蟹。In order to investigate the differences between the nutritional components and nutritional value of juvenile Chinese mitten crabs from different families, two families with red and green shell were selected to study the differences in approximate nutrients, amino acid composition and content, and mineral element content. The results showed that the crude protein content of the red-shell crab family was significantly higher than that of the green-shell crab family in the normal body color group(P<0.05)., and there was no significant difference in other conventional components. The content of glutamate in juvenile crabs of the red-shell crab was 2.13%, while the histidine content was the lowest, 0.29%. The content of aspartic acid, serine, glutamic acid, glycine, valine,leucine, tyrosine, phenylalanine, lysine and histidine of green shell crab were significantly lower than that of red shell crab families(P<0.05). TAA as well as TEAA in the red-shell crab family were significantly higher than that of the green-shell crab family There was no significant difference in the content of micro elements, and there was no significant difference in the content of iron, manganese, copper, zinc, selenium and lead in the muscles of juvenile Chinese mitten crabs from two families. In summary, the crude protein content of juvenile crabs of the red-shell crab family is significantly higher than that of the green-shell crab family, the total amount of amino acids is also higher, and the nutritional value is higher than that of the green-shell crab family.
