摘  要:该文采用液相色谱-串联质谱法(LC-MS/MS)测定了聚酰胺/聚丙烯(PA/CPP)蒸煮袋中2,4-二氨基甲苯(2,4-TDA)、2,6-二氨基甲苯(2,6-TDA)、4,4′-二氨基二苯甲烷(4,4′-MDA)3种常见初级芳香胺(PAAs)的迁移量。结果表明,该方法具有操作简单、灵敏性高等优点,满足欧盟法规(EU)No 10/2011中已修订的对单个PAAs的特定迁移限量(SML)的检测要求。利用该方法检测30种PA/CPP蒸煮袋在模拟迁移条件(100℃,2 h)下PAAs的迁移量,发现所有蒸煮袋中均检出4,4'-MDA,且17种蒸煮袋中4,4'-MDA迁移量高于其SML(0.002 mg/kg)。实验还研究了加热处理对蒸煮袋的影响以及储运过程对蒸煮袋中4,4'-MDA迁移的影响。发现升高加热温度与(延长)加热时间均会导致蒸煮袋中异氰酸酯单体的增多,最终促进PAAs的迁移;储运过程模拟中发现环境温度的升高以及运输过程中的振动均会促进蒸煮袋中4,4'-MDA的迁移,且样品袋在60℃的环境温度下储存5 d后,其4,4'-MDA迁移量存在超标现象,可能存在食品安全隐患。A liquid chromatography-triple quadrupole tandem mass spectrometry(LC-MS/MS)was developed for determination of the migration amounts of three primary aromatic amines(PAAs)in⁃cluding 2,4-diaminotoluene,2,6-diaminotoluene,4,4′-diaminodipheny/methane in Polyamide/cast polypropylene(PA/CPP)retort pouch.Results showed that this method has the advantages of simple operation and high sensitivity,which meets the specific migration limit(SML)detection require⁃ments for individual PAAs revised in the European Regulation(EU)No 10/2011.This method was used to detect the migration amounts of PAAs in 30 kinds of PA/CPP retort pouches under the condi⁃tion of 100℃for 2 h.It was found that 4,4'-MDA was detected in all retort pouches,and the migra⁃tion amounts of 4,4'-MDA in 17 kinds of retort pouches were higher than its SML(0.002 mg/kg).Af⁃terwards,the influence of heat treatment on retort pouches and the influences of storage and transpor⁃tation on the migration of 4,4'-MDA in retort pouches were investigated.The results showed that heating temperature and heating time might lead to the increase of isocyanate monomer in retort pouches,and finally promote the migration of PAAs.During the simulation of the storage and trans⁃portation process,it is found that the increase in ambient temperature and the vibration during trans⁃portation could promote the migration of 4,4'-MDA in retort pouches.The amount of 4,4'-MDA mi⁃gration might exceed the standard if the sample bag was exposed to an ambient temperature of 60℃for 5 d,and there may be food safety issues.
