摘　　要：【目的】研究小黑药茎叶提取液对亚硝化反应的清除和阻断作用。【方法】以小黑药茎叶为研究对象,采用单因素试验及L_(9)(3^(4))正交实验法确定最佳提取条件,通过紫外分光光度法测定了小黑药茎叶提取液对亚硝酸盐的清除率和对亚硝胺的阻断率。【结果】从小黑药茎叶中提取抑制亚硝化反应活性成分的最佳提取工艺条件:浸提温度65℃、浸提剂乙醇的浓度为25%、固液比为1∶20,浸提时间为3 h,此时,小黑药提取液对亚硝盐清除率最高为68.26%,对N-亚硝基化合物生成阻断率最高为85.22%。【结论】小黑药茎叶提取液对亚硝化反应具有较好的抑制作用,可应用于开发新的防癌抗癌天然保健品。【Objective】The purpose of this paper was to investigate the effects of Inula nervosa Wall.extracts on scavenging nitrite and inhibiting the formation of N-dimethyl nitrosamine(NDMA)in vitro.【Method】The scavenging rate of nitrite and the disconnecting rate of nitrosamine were determined by ultraviolet spectrophotometry,and the optimum extraction conditions were obtained by L_(9)(3^(4))orthogonal test.【Result】The optimum extract conditions were as follows:concentration of ethanol solution was 25%,the ratio of solid to solution was 1 to 20,and extraction was carried out at 65℃for 3 hours.Under those conditions,the maximum capacity of scavenging effect to sodium nitrite was 68.26%,and the maximum capacity of inhibition the N-dimethyl nitrosamine was 85.22%.【Conclusion】The extracts of stem and leaf of Inula nervosa Wall.has a strong inhibitory effect on nitrification,which can be used to develop new anti-cancer natural health products.
