摘  要:建立了高效液相色谱法通过示差折光检测器测定无糖食品中的异麦芽酮糖醇含量的方法。样品中的异麦芽酮糖醇用去离子水超声提取,使用XBridge■BEH Amide 5μm(4.6×250mm)色谱柱分离,乙腈-水-三乙胺(3∶1∶0.002,V/V/V)溶液在流速为1.0mL/min下等度洗脱样品溶液。异麦芽酮糖醇的质量浓度在0.1~20.0mg/mL范围内与其峰面积呈现出良好的线性关系,相关系数R^(2)=0.9999,检出限为3.3g/kg,定量限为10g/kg,在无糖糖果、无糖饮料和无糖糕点中异麦芽酮糖醇的平均加标回收率为93.0%~105.7%,方法的相对偏差(RSD,n=6)<3%。结论:该方法操作便捷,检测灵敏度高,稳定性好,适用于无糖食品中异麦芽酮糖醇含量的检测。Isomalt in the sample was extracted with deionized water and separated on XBridge ■BEH Amide 5μm(4.6×250 mm)column with mixture of acetonitrile-water-triethylamine(3∶1∶0.002,V/V/V)as mobile phase at the flow rate of 0.1mL/min.Linear relationship between peak area and mass concentration of isomalt was obtained in the range of 0.1 mg/mL to 20.0 mg/mL,the correlation coefficients(R^(2))were 0.9999,the limit of detection was 3.3 g/kg,and the limit of quantitation was 10 g/kg.The average recoveries of isomalt residues in sugar free candies,beverages and desserts were in the range of 93.0%—105.7%,and the value of RSD(n=6)was less than 3%.The method is simple,sensitive,and stable.
