摘 要:本试验旨在研究杂交构树发酵料对育肥猪生长性能、胴体性状和肉品品质的影响。选用96头体重相近的健康三元杂交育肥猪,随机分成4个组别(每组4头试验生猪,每组6个重复,总计24个试验组):空白对照组、10%杂交构树饲料添加组、15%杂交构树饲料添加组及20%杂交构树饲料添加组。试验饲喂70 d(预试期7 d,正试期63 d)。结果表明:生长性能各处理组较对照组,无显著差异(P≥0.05)。屠宰性状各处理组较对照组,无显著差异(P≥0.05)。肉品品质指标各处理组较对照组,无显著差异(P≥0.05)。杂交构树饲料添加组背膘厚可增加9.1%~12.5%。10%杂交构树饲料添加组屠宰率较对照组,可略提高2.9%。10%杂交构树饲料添加组蛋白质较对照组,可提高4.8%。杂交构树饲料添加组较对照组嫩度值可降低10.6%~18.3%。结论:杂交构树饲料对育肥猪生长性能、胴体性状和肉品品质无负面影响,并可在一定程度上增加背膘厚、蛋白质含量,降低猪肉嫩度值,改善猪肉风味,提高猪肉口感。The purpose of the experiment was to study the effects of hybrid broussonetia papyrifera fermentation on growth performance,carcass traits and meat quality of finishing pigs.96 healthy ternary hybrid finishing pigs with similar body weight were randomly divided into 4 groups(There were 4 test pigs in each group,6 replicates in each group,and a total of 24 test groups):blank control group,10%hybrid broussonetia papyrifera feed addition group,15%hybrid broussonetia papyrifera feed addition group and 20%hybrid broussonetia papyrifera feed addition group.The experiment was fed for 70 days(pre-trial period of 7 days,positive trial period of 63 days).The results show that,there was no significant difference in growth index between the treatment groups and the control group(P≥0.05).There was no significant difference in slaughtering indexes between the treatment groups and the control group(P≥0.05).There was no significant difference in meat quality between the treatment groups and the control group(P≥0.05).The backfat thickness of hybrid broussonetia papyrifera feed group increased slightly by 9.1%~12.5%.The slaughter rate of 10%hybrid broussonetia papyrifera feed group was slightly higher than that of the control group by 2.9%.The protein of 10%hybrid broussonetia papyrifera feed group was slightly higher than that of the control group by 4.8%.The tenderness value of hybrid broussonetia papyrifera feed addition group could be reduced by 10.6%~18.3%compared with the control group.Conclusion:hybrid broussonetia papyrifera feed had no negative effects on growth performance,carcass traits and meat quality of finishing pigs,increased backfat thickness,protein content,reduced pork tenderness value,improved pork flavor and improved pork taste to a certain extent.
