摘 要:为了探究大豆蛋白肽级分与免疫以及抗氧化活性的关系,本试验采用超滤方式进行分级,并对获得的三个级分的大豆蛋白肽(SBPH-1、SBPH-2、SBPH-3)的细胞形态、细胞增殖、细胞因子等指标进行考察,测定DPPH、ABTS自由基清除率。结果如下,不同级分大豆蛋白肽对巨噬细胞的细胞形态无不良反应,可促进巨噬细胞增殖、细胞因子表达,其中SBPH-3级分促进效果最佳,IL-6、IL-1β、TNF-α的分泌量为1566.47、593.32、828.13pg/mL,相比空白组差异显著(P<0.05);此外,不同级分大豆蛋白肽还可提高DPPH、ABTS自由基清除率,DPPH自由基清除率分别为79.46%、81.03%、86.79%,ABTS自由基清除率分别为225.85%、242.95%、261.81%,相比未分级大豆蛋白肽差异显著(P<0.05)。综上所述,不同级分大豆蛋白肽均具有良好的免疫、抗氧化效果,其中SBPH-3效果最佳。In order to study the correlation between soybean protein peptide fractions and its immune and antioxidant properties,ultrafiltration was used to classify soybean protein peptide.Cell morphology,cell proliferation,cytokines and other indexes of soybean protein peptide fractions in three soybean peptide grades(SBPH-1,SBPH-2,SBPH-3)were studied.Then DPPH and ABTS free radical scavenging rates were determined.The results showed that protein peptides had no adverse reactions on the morphology of macrophages;protein peptides can promote the proliferation of macrophages and increase expression of cytokines,among which SBPH 3 grade protein peptides had the best effect.The secretion levels of IL-6,IL-1βand TNF-αare 1566.47,593.32 and 828.13 pg/mL,respectively and were all significantly different from those of blank group(P<0.05).In addition,different grades of soybean protein peptides can also improve DPPH and ABTS free radical scavenging rates differently,DPPH free radical scavenging rates were 79.46%,81.03%,86.79%,respectively;ABTS free radical scavenging rates were 225.85%,242.95%,261.81%,respectively.Compared with ungraded soybean protein peptide,there was a significant difference(P<0.05).In conclusion,different grades of soybean protein peptides all show good immune and antioxidant effects,and SBPH-3 has the best effect.
