摘　　要：酒经是伴随着酿酒技术发展而产生的文献,主要包括记述各种酿酒工艺与分类,是对古代酿酒技术的科学概括。此外还有一部分酒经收录历代的酒史、酒典、酒事、酒器等,是中国酒文化发展的具体呈现。唐宋时期的制酒业较为发达,人工制曲与酿造技术在理论和工艺上都有极大的突破,因而产生的酒经最多,也具有代表性。这些酒经除了极个别外,大都收录在元末陶宗仪编《说郛》卷九十四中。唐宋时期酒经的作者大都是当时著名的文人,如唐代的王绩、皇甫松,宋代的田锡、苏轼、范成大、窦苹等,因而在文字叙述上具有文学性,增加了可读性。同时,这些酒经又是当时酿酒技艺的真实反映,对研究中国酒文化的发展提供了原始资料,具有重要的文献价值。Liquor classics is a literature accompanied by the development of liquor-making technology,which mainly includes the description of various liquor-making techniques and classification,and is a scientific summary of ancient liquor-making technology.In addition,some wine classics include wine history,wine classics,wine events,wine containers and so on,which are the concrete presentation of the development of Chinese wine culture.Liquormaking industry in Tang and Song Dynasties was relatively developed,and while artificial koji-making and brewing technology having a great breakthrough in theory and technology,resulting in the largest number of liquor classics,which were also represented for such techniques.Except for a few of them,most of these wine classics are included in Volume 94 of Shuo Qi,which was compiled by Tao Zongyi in the late Yuan Dynasty.In the Tang and Song Dynasties,most of the authors of wine classics were famous literati at that time,such as Wang Ji and Huangfu Song in the Tang Dynasty,Tian Xi,Su Shi,Fan Chengda and Dou Ping in the Song Dynasty,so they had literary narratives and were increased readability.At the same time,these wine classics are the true reflection of the wine-making skills at that time,and which provides the original information for the study of the development of Chinese wine culture,which has an important literature value in history.
