摘  要:以胡萝卜和白菜为主要原料,羧甲基纤维素为胶黏剂,甘油为增塑剂制备复合蔬菜纸.采用单因素试验和响应面实验研究超声波处理功率和处理时间、胡萝卜和白菜比例、羧甲基纤维素添加量对复合蔬菜纸吸水性能和力学性能的影响.实验结果表明:胡萝卜与白菜最佳质量比例为1∶4,羧甲基纤维素添加量为0.4%,甘油添加量为4%,最佳超声波功率为100 W,超声时间为15 min时,胡萝卜/白菜复合蔬菜纸性能最佳.With carrot and Chinese cabbage as raw material,carboxymethyl cellulose as adhesive and glycerin as plasticizer,single factor test and response surface optimization test were adopted to determine the effects of the ultrasonic treatment power and treatment time,the ratio of carrot pulp to Chinese cabbage pulp,the amount of carboxymethyl cellulose,the amount of glycerin on the water absorbency,the mechanical property of the carrot and Chinese cabbage composite vegetable paper.The results showed that when the ratio of carrot pulp to Chinese cabbage pulp was 1∶4,the amount of carboxymethyl cellulose was 0.4%,the amount of glycerin was 4%,the ultrasonic power was 100 W and the ultrasonic time was 15 min,the prepared carrot-Chinese cabbage compound vegetable paper had the best performances.
