摘　　要：地沟油鉴别是目前食品领域急需解决的关键技术之一。本文对地沟油的色谱鉴别技术进行了总结和分析,重点阐述了气相色谱、液相色谱等鉴别方法的应用情况和不足之处,为合理化解决地沟油问题提供参考。The detection of cooking waste oil is one of the key technologies solved urgently in the field of food.This paper summarized the chromatographic methods of cooking waste oil,and elaborated application and disadvantage of gas chromatography and liquid chromatography.A reference was provided for the solution of the problem of cooking waste oil.
