摘  要:采用超声辅助法提取芥蓝多酚,并通过响应面法对提取工艺进行优化。以液料比、乙醇浓度、超声温度和超声时间4个因素进行单因素试验,在此基础上,以芥蓝多酚提取率为响应值,应用Box-Behnken法进行四因素三水平的试验设计和优化,得到芥蓝多酚最佳的提取工艺条件为液料比38mL/g、乙醇浓度61%、超声温度63℃和超声时间34min。此时芥蓝多酚提取率为15.03mg/g,与该模型的预测值(15.18mg/g)相比,两者相对误差为0.99%,说明该回归模型得到的提取工艺参数可靠,准确性较高,可以利用响应面法优化芥蓝多酚的提取。研究结果为芥蓝多酚的提取与开发提供了新的方向。Ultrasound-assisted extraction of polyphenols from Chinese kale was used in this experiment,and the ex⁃traction process was optimized by response surface methodology.Single factor experiments were carried out with four factors:liquid-to-material ratio,ethanol concentration,ultrasonic temperature and ultrasonic time.On this basis,with the extraction rate of Chinese kale polyphenols as response value,Box-Behnken was used to design and opti⁃mize the experiment at four factors and three levels.The optimum extraction conditions of Chinese kale polyphenols were obtained as follows:38 mL/g of liquid-solid ratio,61%of ethanol concentration,63℃of ultrasonic temperature,34 minutes of ultrasonic time.The extraction yield of Chinese kale was 15.03 mg/g,compared with the best predic⁃tive value of the model(15.18mg/g),the relative error was 0.99%,which indicated that the extraction process param⁃eters obtained by the regression model were reliable and accurate.Response surface methodology could be used to optimize the extraction of polyphenols in Chinese kale,which provided a theoretical basis and a new direction for the extraction and development of polyphenols in Chinese kale.
