摘  要:本研究对鱼糜制品及其加工原材料进行了硼含量的测定,共采集鱼糜制品33批次样品,结果显示共有7批次鱼糜制品检出硼,硼酸的含量范围在0.743~2.00 mg/kg之间,平均值为1.43 mg/kg。根据鱼糜制品的生产工艺,采集主要加工原材料共33批次样品,结果显示共有11批次样品检出硼,硼酸本底值的含量范围在0.732~53.4 mg/kg之间;在大豆分离蛋白中的检出率较高,3批样品均有检出,最高浓度为53.4 mg/kg。结果表明加工原料中硼的本底含量会导致鱼糜制品最终检出硼,本研究可为鱼糜制品中硼含量限量标准的制定和日常监管提供科学依据。In this study,the boron content of surimi products and processing materials was determined.A total of 33 surimi samples were collected with 7 samples detected for boron.The boric acid ranged from 0.743 to 2.00 mg/kg,and the average was 1.43 mg/kg.A total of 33 main processing materials for surimi products were collected according to the production process.The results showed that boron was detected from 11 samples,and background values of boric acid ranged from 0.732 to 53.4 mg/kg.The detection rate of soybean protein isolate was relatively high with 3 samples all detected,and the maximum concentration was 53.4 mg/kg.The results showed that boron was detected in surimi products because of background content of boron in processing materials.This study can provide a scientific basis for the establishment of boron limit standard and daily supervision of surimi products.
