摘 要:目的:测定箬叶中5种重金属的迁移量,分析其在不同食品模拟物中的迁移情况。方法:把箬叶放入不同食品模拟物中,在100℃条件下保温24 h,使其中的重金属向食品模拟物充分迁移,用微波消解法消解,原子吸收光谱法和原子荧光光谱法测定迁移试验前后箬叶中重金属的含量,计算迁移量,分析其迁移情况。结果:箬叶中砷在模拟物超纯水、氯化钠溶液(2.5 g/100 mL)、4%(V/V)乙酸溶液、碳酸钠-碳酸氢钠缓冲溶液(pH 10.14)、蔗糖溶液(10 g/100 mL)和正己烷中的迁移量分别为0.0054 mg/L、0.0029 mg/L、0.0054 mg/L、0.0056 mg/L、0.0047 mg/L和0.0034 mg/L,铬和汞在6种模拟物中迁移不明显,铅在4%(V/V)乙酸溶液和正己烷中迁移量分别为0.013 mg/L和0.011 mg/L,镉在氯化钠溶液(2.5 g/100 mL)和4%(V/V)乙酸溶液中迁移量均为0.0002 mg/L。结论:箬叶中砷的迁移活性最强;铬和汞的迁移活性最弱,在所选食品模拟物中迁移不明显;箬叶中铅、镉和砷是重金属迁移的风险指标。The objective is to measure the migration amount of 5 heavy metals(lead,cadmium,chromi⁃um,arsenic,mercury)from Indocalamus tessellatus leaves to different food simulants.In order to migrate the heavy metals to the food simulants entirely,the I.tessellatus leaves are put into the food simulants and keep at 100℃for 24 hours.The heavy metals in the I.tessellatus leaves are measured before and after the migration test by Microwave digestion,atomic absorption spectroscopy and atomic fluorescence spectros⁃copy,and then the migration amounts are measured and analyzed.The migration amounts of arsenic from I.tessellatus leaves to ultrapure water,sodium chloride solution(2.5 g/100 mL),4%(V/V)acetic acid solution,sodium carbonate-sodium bicarbonate buffer solution(pH 10.14),sucrose solution(10 g/100 mL)and N-hexane are 0.0054 mg/L,0.0029 mg/L,0.0054 mg/L,0.0056 mg/L,0.0047 mg/L and 0.0034 mg/L respectively.The migration of chromium and mercury is not obvious in the six simulants.The migration amounts of lead in 4%(V/V)acetic acid and N-hexane are 0.013 mg/L and 0.011 mg/L re⁃spectively.The migration amount of cadmium is 0.0002 mg/L both in sodium chloride solution(2.5 g/100 mL)and 4%(V/V)acetic acid solution.The migration activity of arsenic in the I.tessellatus leaves is the strongest,and the migration activity of chromium and mercury is the weakest.Chromium and mercury do not migrate significantly in the selected food simulants;lead,cadmium and arsenic in Indocalamus leaves are risk indicators of heavy metal migration.
