摘  要:目的研究山东省胶东半岛养殖的140份海带中铅、镉、砷等10种金属及无机砷含量水平及分布特征,评估其对人体健康的潜在风险,以期为我国鲜海带制定卫生标准提供参考依据和数据支撑。方法采用ICP-MS法测定样品中铅、镉、砷等九种元素,原子荧光法测定汞,HPLC-ICP-MS联用法测定无机砷。采用目标危险系数评估鲜海带中金属对成人及儿童存在的潜在健康风险。结果 10种金属元素平均浓度依次递减为Al、As、Zn、Cu、Cr、Ni、Pb、Cd、Sn、Hg。单个元素风险顺序为Cd> Cr> Al> Pb> Cu> Ni> Zn> Hg。单一元素的目标危险系数THQ值与多种金属的复合目标危险系数TTHQ值均小于1。虽然样品中总砷的含量非常高,但无机砷含量却很低,95%样品中无机砷未检出。结论食用山东省胶东半岛养殖海带目前对人体不具有危险性。对人体健康危害最大的元素为镉,贡献率达32.4%(儿童)、32.2%(成人)。应关注海带中镉元素含量对人体健康造成的潜在威胁。对儿童来说多种金属的复合风险TTHQ值(0.877)已接近1,也应引起持续关注。Objective To assess the potential risks to human health, as well as to provide reference and data support for the development of health standards for fresh kelp in China due to the content and distribution characteristics of ten metal elements(such as Pb, Cd, As) and inorganic arsenic in 140 kelp samples raised in Jiaodong Peninsula of Shandong Province. Methods Nine elements including Pb, Cd and As were determined by ICP-MS method, and Hg was determined by atomic fluorescence method, additionally, inorganic arsenic was determined by HPLC-ICP-MS. The target hazard quotient(THQ) and total target hazard quotient(TTHQ) were used to evaluate the potential health risks of metals in fresh kelp to adults and children. Results The mean concentrations of ten metal elements in 140 fresh kelp samples decreased in the order of Al, As, Zn, Cu, Cr, Ni, Pb, Cd, Sn and Hg. The target hazard quotients(THQ) of a single metal element from high to low were Cd> Cr> Al> Pb> Cu> Ni> Zn> Hg, and both the THQ and TTHQ were less than 1. The content of the total arsenic in the kelp samples was very high, but the inorganic arsenic content was very low. Inorganic arsenic was not detected in 95% of 140 kelp samples. Conclusion Consumption of cultured kelp in Jiaodong Peninsula of Shandong Province is not dangerous to human. Among ten metal elements, the THQ of Cd accounts for 32.4% of the TTHQ for children and 32.2% for adult, indicating that the potential risk of Cd content in cultured kelp to human health should be paid more attention. What is more, the TTHQ(0.877) for children was close to the risk value of 1, so the potential risk of the cultured kelp in Jiaodong Peninsula of Shandong Province to children should be paid continuous attention.
