摘 要:目的调查1起误食亚硝酸盐引起的食源性疾病暴发事件,分析原因,探讨预防控制措施。方法 2019年3月29日对淄川区医院和就餐现场及供餐单位食品制作现场开展流行病学、现场卫生学调查,对患者生物学标本、可疑食物标本、供餐单位食物原料、配料进行实验室检测。结果某公司14名人员均发病,经检测12份样本中9份亚硝酸钠结果超标,"味精"亚硝酸钠含量为99%。患者临床症状符合亚硝酸盐中毒,经吸氧、输注亚甲蓝治疗后好转。结论该事件是1起由于替班厨师操作失误,误用亚硝酸盐作为味精调味料进行食物加工引起的食源性疾病暴发事件。Objective To investigate a foodborne disease outbreak caused by accidental eating of nitrite, analyze the epidemiological causes, and explore the prevention and control measures. Methods On March 29 th, 2019,epidemiological and on-the-spot hygienic investigations were carried out in hospitals, dining sites and food production sites of feeding units in Zichuan district, and biological specimens of patients, suspicious food specimens, food raw materials and ingredients of feeding units were tested in laboratory. Results All 14 employees in the company suffered from disease, and 9 out of 12 samples were tested for excessive sodium nitrite.The content of "MSG" sodium nitrite was 99%.The patient’s clinical symptoms were consistent with the symptoms of nitrite poisoning, and improved after treatment with oxygen inhalation and infusion of methylene blue. Conclusion The incident was a foodborne disease outbreak caused by the misoperation of a substitute chef who misused nitrite as a monosodium glutamate seasoning for food processing.
