烟叶外观质量与感官舒适性的相关性分析

摘　　要：为了研究烟叶外观质量对感官舒适性的影响,运用简单相关分析、典型相关分析对中国五大烟区16个烤烟种植省份的170份代表性烟叶样品的外观质量与感官舒适性评价数据进行分析。结果显示,所选170个样品外观质量存在着广泛的变异,感官舒适性评价结果大致符合正态分布;简单相关分析结果表明,外观质量中的颜色、柔韧性、光泽强度、厚度、弹性和总分与感官舒适性指标中的甜润、清晰、流畅、圆润、醇和、干净、清爽、湿润及评吸总分之间均呈极显著正相关;典型相关分析与简单相关分析的结果基本一致,但主要是厚度、颜色和弹性与感官舒适性指标中的甜润、清晰、清爽之间的相关关系极显著。综合来看,烟叶的颜色、厚度和弹性对于感官舒适性具有重要意义。In order to study the effect of tobacco appearance quality on sensory comfort,simple correlation analysis and typical correlation analysis were used to analyze the appearance quality and sensory comfort evaluation data of 170 representative tobacco samples from 16 flue-cured tobacco growing provinces in the five major tobacco regions of my country.The results indicated that there were wide variations in the appearance quality of 170 selected samples,and the sensory comfort evaluation results were generally in line with the normal distribution;The results of simple correlation analysis showed that the color,flexibility,gloss intensity,thickness,resilience and total score in the appearance quality were extremely significantly positively related to the following sensory characterisitcs,i.e.,sweetness,clear,smooth,mellow,alcohol,clean,refreshing,moist and total sensory score;The results of the typical correlation analysis and the simple correlation analysis are basically the same,but mainly the correlation between the thickness,color and resilience in sensory comfort index is very significant.In a word,the color,thickness and resilience of tobacco leaf are very important for sensory comfort.
