摘  要:为了探究独龙鸡屠宰性能和其肉品质的相关性,试验采用《家禽生产性能名词术语和度量计算方法》(NY/T 823—2020)及《食品安全国家标准》中规定的方法对20只周龄相同、饲养管理条件相同的独龙鸡进行研究,测定其屠宰性能及肉品质,并利用SPSS 21.0软件中的Pearson Correlation进行相关性分析。结果表明:母鸡的宰前活重、屠体重、半净膛重、全净膛重、胸肌重和腿肌重均极显著低于公鸡(P<0.01),屠宰率显著低于公鸡(P<0.05),而胸肌率和肌胃率则显著高于公鸡(P<0.05)。公鸡及母鸡的腿肌肌肉黄度均极显著低于胸肌(P<0.01),公鸡腿肌肌肉红度显著高于胸肌(P<0.05);母鸡腿肌剪切力极显著低于公鸡(P<0.01),胸肌剪切力与公鸡比较差异不显著(P>0.05);母鸡胸肌和腿肌的失水率分别显著(P<0.05)和极显著(P<0.01)高于公鸡。公鸡腿肌粗脂肪含量显著高于胸肌(P<0.05),母鸡腿肌粗脂肪含量极显著高于胸肌(P<0.01);公鸡腿肌粗蛋白含量显著低于胸肌(P<0.05),母鸡胸肌粗蛋白含量显著低于公鸡(P<0.05)。胸肌失水率和腿肌失水率与活重、屠体重、半净膛重、全净膛重、胸肌重和腿肌重呈显著或极显著负相关关系(P<0.05或P<0.01),胸肌蒸煮损失与胸肌失水率、胸肌灰分与胸肌水分呈显著正相关关系(P<0.05),腿肌粗脂肪和胸肌粗脂肪与腿肌水分呈极显著或显著负相关关系(P<0.01或P<0.05),腿肌失水率与胸肌失水率、腿肌蒸煮损失与胸肌蒸煮损失、腿肌粗脂肪含量与胸肌粗脂肪含量、腿肌粗蛋白含量与胸肌粗蛋白含量均呈极显著正相关关系(P<0.01)。说明独龙鸡的屠宰性能与肉品质间具有明显的相关性,可以为其选育提供参考。In order to explore the correlation between the slaughter performance of Dulong chicken and its meat quality, 20 dulong chickens with the same weeks of age and the same feeding and management conditions were studied by the method specified in Poultry Production Performance Terminology and Measurement Calculation Method(NY/T 823—2020) and National Food Safety Standard. Slaughter performance and meat quality were determined, and correlation analysis was performed using Pearson Correlation in the SPSS 21.0 software. The results showed that the pre-slaughter weight, slaughter weight, half evisceration weight, full evisceration weight, breast muscle weight and leg muscle weight of hens were extremely significantly lower than those of roosters(P<0.01), and the slaughter rate was significantly lower than that of roosters(P<0.05), while the breast muscle rate and muscular stomach rate of hens were significantly higher than those of roosters(P<0.05). The yellowness of the leg muscles of roosters and hens was extremely significantly lower than that of the pectoral muscles(P<0.01), and the redness of the leg muscles of roosters was significantly lower than that of the pectoral muscles(P<0.05). The leg muscle shear force of hens was extremely significantly lower than that of cocks(P<0.01), and there was no significant difference in pectoral muscle shear force with cocks(P>0.05). The water loss rates of pectoral and leg muscles of hens were significantly(P<0.05) and extremely significantly(P<0.01) higher than those of cocks, respectively, The crude fat content of the cock’s leg muscle was significantly higher than that of the pectoral muscle(P<0.05), and the fat content of the hen’s leg muscle was extremely significantly higher than that of the pectoral muscle(P<0.01). The crude protein content of the cock’s leg muscle was significantly lower than that of the pectoral muscle(P<0.05), and the crude protein content of the hen’s breast muscle was significantly lower than that of the rooster(P<0.05).
