摘  要:鲐鱼具有丰富的蛋白质和矿物质成分,同时拥有大量的生物活性功能成分,这些功能成分具有抗氧化、抗疲劳、抗肿瘤、抗高血压和降血脂的作用。我国鲐鱼资源丰富、价格低,为了保护我国的鲐鱼产业,发展鲐鱼的深加工是目前主要的方法和措施。我国鲐鱼多肽的提取技术目前还在起步阶段,该研究在鲐鱼多肽提取过程中,从最佳水解蛋白酶种类、水解蛋白酶的用量、pH值和温度4个方面对鲐鱼多肽的提取工艺进行优化。将提取的鲐鱼多肽用于抗疲劳研究,并为其将来在运动员抗疲劳方面的开发与利用提供理论基础。Scomber japonicus is rich in protein and mineral components,as well as a large number of bioactive functional components,which have the effects of anti-oxidation,anti-fatigue,anti-tumor,anti-hypertension and lowering blood lipid.The Scomber japonicus resources in China are abundant and cheap,in order to protect the industry of Scomber japonicus in China,the development of deep processing of Scomber japonicus is the main method and measure.The extraction technology of peptides from Scomber japonicus in China is still in the initial stage,in the extraction technology of peptides from Scomber japonicus is optimized from four aspects of the best type of hydrolytic protease,the amount of hydrolytic protease,pH value and temperature.The extracted peptides from Scomber japonicus are used in anti-fatigue research and it will provide a theoretical basis for the development and utilization of athletes'anti-fatigue.
