摘 要:为研究植物乳酸杆菌在不同发酵时间的差异性代谢物质。利用GC-MS代谢组学技术,将培养至6 h(A1组)、12 h(A2组)和24 h(A3组)的植物乳酸杆菌代谢产物进行比较。结果表明:与A1组相比,A2组D-(-)-Lactic acid、Glycerol、Glycine、Phenylalanine浓度极显著升高(P<0.01),Alpha-D-Glucopyranose、D-Glucose、d-Mannose、Glutamic acid、D-(-)-Fructose、D-Allofuranose、D-(-)-Fructofuranose、2-Butenedioic acid浓度极显著降低(P<0.01);A3组D-(-)-Lactic acid、L-Lysine、D-Allose、Glycerol、Phenylalanine、D-(+)-Arabitol、Glycine、l-Alanine、Benzenepropanoic acid浓度极显著高于A1组(P<0.01),d-Mannose、Alpha-D-Glucopyranose、D-Glucose、d-Mannose、D-Allofuranose、Glutamic acid、D-(-)-Fructose浓度极显著低于A1组(P<0.01)。与A2组相比,A3组D-(-)-Lactic acid、L-Lysine、D-Allose、l-Alanine、D-(+)-Arabitol、L-Leucine、Benzenepropanoic acid、Phenylalanine、L-Valine、Glycerol、4′-Methoxy-2-hydroxystilbene、L-Isoleucine浓度极显著增加(P<0.01),d-Mannose、Alpha-D-Glucopyranose、D-Glucose、D-Allofuranose浓度极显著降低(P<0.01)。将各组差异代谢产物进行KEGG库搜索,均富集于ABC tansporters通路,且达到极显著水平(P<0.01)。The aim of this study was to investigate the differential metabolites of Lactobacillus plantarum fermented at different time.The metabolites of Lactobacillus plantarum cultured for 6 h(group A1),12 h(group A2) and 24 h(group A3) were compared by GC-MS metabolomics technique.The results showed that the concentrations of D-(-)-Lactic acid,Glycerol,Glycine and phenylalanine in group A2 were significantly higher than those in group A1(P <0.01),and the concentrations of Glucose,D-Glucose,D-Mannose,Glutamic acid,D-(-)-Fructose,D-Allofuranose,D-(-)-Fructofuranose and 2-Butenedioic acid were significantly lower than those in group A1(P <0.01).The concentrations of D-(-)-Lactic acid,L-Lysine,D-Allose,Glycerol,Phenylalanine,D-(+)-Arabitol,Glycine,l-Alanine,and Benzenepropanoic acid in group A3 were significantly higher than those in group A1(P <0.01),and the concentrations of d-Mannose,Alpha-D-Glucopyranose,D-Glucose,d-Mannose,D-Allofuranose,Glutamic acid and D-(-)-Fructose were significantly lower than those in group A1(P <0.01).The concentrations of D-(-)-Lactic acid,L-Lysine,D-Allose,l-Alanine,D-(+)-Arabitol,L-Leucine,Benzenepropanoic acid,Phenylalanine,L-Valine,Glycerol,4′-Methoxy-2-hydroxystilbene and L-Isoleucine in group A3 were significantly higher than those in group A2(P <0.01),and the concentrations of d-Mannose,Alpha-D-Glucopyranose,D-Glucose,and D-Allofuranose were significantly lower than those in group A2(P <0.01).The differential metabolites in each group were searched in KGGE library,and they were all enriched in ABC tansporters pathway,and reached a very significant level(P<0.01).
