摘 要:西藏高原黄蘑菇是一种营养物质十分丰富的具有高原特色的野生植物资源,富含对人体有益的微量元素,并且具有高纤维、高蛋白、低脂肪、低热量等特点。本文对西藏林周地区黄蘑菇的常规营养成分及无机微量元素、氨基酸组成和维生素进行分析研究。结果表明,黄蘑菇的粗蛋白含量为31.4 g/100 g,总脂肪含量为1.05 g/100 g,膳食纤维含量为17.88 g/100 g,在黄蘑菇所含有的氨基酸中,谷氨酸含量最高为4.39 mg/100 g,此外还含有丰富的钙、铁、锌、硒等无机元素及维生素等营养物质,其中钙含量为733 mg·kg^(-1),锌含量为69.9 mg·kg^(-1)。The Tibetan Plateau Armillaria luteo-virens is a wild plant resource with high plateau characteristics rich in nutrients, rich in trace elements beneficial to the human body, and has the characteristics of high fiber, high protein,low fat, and low calorie. This article analyzes and studies the conventional nutrient components, inorganic trace elements,amino acid composition and vitamins of Armillaria luteo-virens in the Linzhou area of Tibet. The results showed that the crude protein content of Armillaria luteo-virens was 31.4 g/100 g, the total fat content was 1.05 g/100 g, and the dietary fiber content was 17.88 g/100 g. Among the amino acids contained in Armillaria luteo-virens, the content of glutamic acid was the highest. It is 4.39 mg/100 g, and it is also rich in calcium, iron, zinc, selenium and other inorganic elements and vitamins and other nutrients. The calcium content is 733 mg·kg^(-1)and the zinc content is 69.9 mg·kg^(-1).
