摘  要:鲜黄花菜消费量逐年上升,食用安全问题引起了更多人的关注。国内对食用处理不当的鲜黄花菜造成食用者恶心、呕吐、口干舌燥和腹泻的成分作了大量的研究,形成了2种研究结论。2种研究结论均认为鲜黄花菜中含有可以导致恶心、腹泻的物质,经高温、漂烫杀青处理后会被分解,食用是安全的。不同点是认为导致恶心、腹泻的物质不同,1978—2020年的研究认为导致恶心、腹泻的成分是秋水仙碱,近期的研究认为是多个化合物的共流出组分导致恶心、呕吐。The consumption of fresh day lily is increasing year by year,and the problem of food safety has attracted more and more attention.In China,a lot of research has been done on the components of nausea,vomiting,dry mouth and diarrhea caused by improper consumption of fresh day lily,and two research conclusions have been formed.Both research conclusions believe that fresh day lily contains substances that can cause nausea and diarrhea.After high temperature,blanching and killing treatment,it will be decomposed and safe to eat.The difference is that the substances that cause nausea and diarrhea are different.In the first 40 years from 1978 to 2020,studies believe that the component that causes nausea and diarrhea is colchicine,and recent studies believe that it is the co outflow component of multiple compounds.
