摘  要:本文以云南大叶种古树茶单芽及一芽二叶初展鲜叶为原料,通过低温长时或加温萎凋技术,轻压或适度重压长时间揉捻,控温控湿定时发酵及理条、整形技术措施,探索出适合云南茶叶主产区古树滇红茶的加工工艺,应用此工艺生产的古树滇红茶系列产品得到市场认可及消费者喜爱。In this paper,tea buds or shoots with one bud and two leaves from ancient tea trees of Yunnan large leaf variety were used as raw material to process black tea through withering at low temperature for extended time or accelerated withering by heating,rolling at light pressure or moderate pressure for extended time,fermenting at controlled temperature and humidity and finally shaping.This processing procedure was confirmed to be suitable for ancient tree black tea processing.
