摘 要:分析比较不同品种苹果的NFC与FC果汁在多酚方面的差异,为NFC果汁的真伪鉴别和NFC果汁标准的建立提供科学方法和试验依据。通过超声辅助提取法从10个不同品种苹果的非浓缩还原汁中(NFC)提取多酚物质,采用高效液相色谱法检测多酚物质,分析比较多酚的种类及含量与FC果汁的差异,以鉴别NFC苹果汁和掺假果汁。结果表明,10个品种的苹果NFC果汁中都含有6种多酚物质(没食子酸、对羟基苯甲酸、绿原酸、咖啡酸、表儿茶素、槲皮素),其含量具有显著性差异(主成分为绿原酸,含量最高为116.691±0.0641μg/mL,最低为37.3361±0.0099μg/mL),NFC果汁基本不含有根皮苷、根皮素;寒富品种苹果的FC果汁中出现了根皮素,在乔纳金、自由、延光、富士品种的FC的苹果汁中出现了根皮素和根皮苷两种酚类。因此,NFC苹果汁多酚基本不含有根皮苷、根皮素,如含有根皮苷和根皮素,则可推断为FC掺假果汁,试验建立的方法可为NFC果汁的鉴伪检验提供有用工具。The differences of polyphenols between NFC juice and FC juice from different apple varieties were analyzed and compared to provide scientific method and experimental basis for the authentication detection of NFC juice and the establishment of NFC juice standard.The polyphenols were extracted from 10 different apple varieties of NFC juice by ultrasonic assisted extraction firstly,then the polyphenols was detected through high performance liquid chromatography method,and the types and contents of polyphenols in different varieties of apple NFC juice was analyzed and compared with FC apple juice to identify NFC apple juice and adulterated apple juice.The experiment results showed that 6 kinds of polyphenols(Gallic acid,p-hydroxybenzoic acid,chlorogenic acid,caffeic acid,epicatechin,quercetin)were contained in all the 10 kinds of apple NFC juice,the content of polyphenols in different apple varieties of NFC juice has significant difference(The main component is chlorogenic acid,and the most highest content of chlorogenic acid was 116.691±0.0641 mg/L,while the lowest content was 37.3361±0.0099 mg/L).No phlorizin and phloreside appeared in NFC apple juice.But the phlorizin appeared in FC juices of Hanfu apples,and phenols of phloretin and phloreside appeared in FC apple juice of Qianajin,Ziyou,Yanguang and Fuji apples.So NFC apple juice don't contains phlorizin and phloreside,if phlorizin and phlorizin could be identified in NFC apple juice,this apple juice can be defined as adulterated fruit juice with FC juice.The method established in this experiment could provide useful tools for NFC apple fruit juice authentication detection.
