摘 要:文章旨在评估日粮电解质平衡(DEB)对肉牛生长性能、胴体性状和肉品质的影响。试验将平均初始体重为(743.78±2.04)kg的48头荷斯坦肉牛随机分为2组,每组8个重复,每个重复3头。对照组饲喂DEB值为+50的全混合日粮,处理组饲喂DEB值为-80的全混合日粮,整个试验分为0~5周和6~10周2个阶段共70 d。结果:与对照组相比,处理组肉牛在0~5 w、6~10 w和0~10 w平均日采食量分别显著降低13.64%、18.46%和16.09%(P<0.05),同时干物质和代谢能摄入量分别显著降低5.15%和4.27%(P<0.05)。但处理组肉牛粗蛋白质摄入量较对照组显著提高6.81%(P<0.05)。对照组与处理组对肉牛胴体重、屠宰率、背膘厚度和眼肌面积的影响均无显著差异(P>0.05)。但处理组肉牛尿液pH较对照组显著降低18.93%(P<0.05)。对照组与处理组对肌肉成分(水分、粗蛋白质、粗脂肪和粗灰分)及肌肉大理石纹、嫩度和肉色的影响均无显著差异(P>0.05)。结论:在本试验条件下,将日粮的DEB值降至-80显著降低了生长阶段的采食量、干物质和代谢能的摄入量及尿液pH,但对整个生长期的饲料报酬及胴体性状和肉品质无负面影响。This experiment was conducted to evaluate the effects of dietary electrolyte balance(DEB)on growth performance,carcass traits and meat quality of beef cattle.Forty-eight Holstein beef cattle with an average initial body weight of(743.78±2.04)kg were randomly divided into 2 groups with 8 replicates per group and 3 cattle per replicate.The control group was fed a total mixed diet with DEB of+50,and the treatment group was fed a total mixed diet with DEB of-80.The experiment was divided into two stages of 0~5 weeks and 6~10 weeks for 70 days.Results:Compared with the control group,the average daily feed intake of beef cattle in treatment group at 0~5 W,6~10 W and 0~10 W was significantly decreased by 13.64%,18.46%and 16.09%(P<0.05),respectively,while the intake of dry matter and metabolizable energy was significantly decreased by 5.15%and 4.27%(P<0.05),respectively.However,the crude protein intake of beef cattle in treatment group was significantly increased by 6.81%compared with control group(P<0.05).There were no significant differences in carcass weight,dressing percentage,backfat thickness and eye muscle area between control group and treatment group(P>0.05).However,the urine pH value of beef cattle in treatment group was significantly decreased by 18.93%compared with control group(P<0.05).There were no significant differences in muscle composition(water,crude protein,crude fat and ash),muscle marbling,tenderness and flesh color between control group and treatment group(P>0.05).Conclusions:Under the experimental conditions,reducing DEB to-80 significantly reduced feed intake,dry matter and metabolized energy intakes and urine pH,but had no negative effects on feed returns,carcass traits and meat quality throughout the growth period.
