摘　　要：在《蒙古秘史》中多处提到奶食品,而且还涉及了挤奶、奶食品制作、奶食习俗等丰富的奶食文化。奶食品是当时蒙古族的重要主食之一,它与"肉食"相结合,形成一种较独特的饮食结构。而且家畜奶资源的开发利用,进一步挖掘了畜牧经济的生产潜力,为游牧社会提供了一种"游动"的食物生产方式,进一步提升了牧民的家畜培育能力和驯化能力,同时催生了丰富的传统畜牧知识和传统畜牧伦理文化等。奶食品不仅满足了蒙古族自身需求,还传播到很多民族和地区,产生了更广泛的影响。这些奶食文化不仅是蒙古族传统文化的重要组成部分,也是我国宝贵的畜牧文化遗产和饮食文化遗产。In The Secret History of the Mongols,there are not only dairy food in many places,but also rich dairy culture such as milking,dairy food making and dairy food custom.Dairy food was one of the important staple foods of the Mongolian people at that time.It combined with meat food to form a unique diet structure.Moreover,the development and utilization of livestock milk resources further excavates the production potential of livestock economy,provides a kind of"walking"food production mode for the nomadic society,further improves the herdsmen’s ability to breed and domesticate livestock,and at the same time promotes the birth of the rich traditional animal husbandry knowledge and traditional animal husbandry ethics culture.Dairy food not only meets the needs of the Mongolians themselves,but also spread to many ethnic groups and regions and has a wider impact.These dairy culture is not only an important part of Mongolian traditional culture,but also a valuable heritage of animal husbandry culture and diet culture in China.
