摘 要:考察了食醋测定的4种前处理方法,发现最好的前处理方法为采用较少量的HNO_(3)微波消解法;采用ICP-AES法测定了四种名醋样品中Ca、Mg、Fe、Zn、Cd、Mn、Mo、Co八种金属元素的含量。实验结果表明,这几种食醋中均富含人体所需Ca、Mg、Fe、Zn、Mn等对人体有益的金属元素,其中山西老陈醋的金属元素含量更加均衡。所改进的测定方法的回收率为90%~110%,相对标准偏差≤2.23%,检出限介于0.006μg/mL~0.138μg/mL。该方法简便快速、试剂用量省、污染少,结果准确,适用于食醋中多种金属元素含量的同时测定。这些实验结果可为保护地理标志产品,完善名优醋产品"指纹"特色指标,指导人们合理膳食提供科学依据。Four pretreatment methods for determination of vinegar were investigated,and it was found that the best pretreatment method is microwave digestion by using a small amount of HNO_(3).The contents of Ca,Mg,Fe,Zn,Cd,Mn,Mo and Co in the four famous vinegar samples were determined by ICP-AES.The results show that these vinegars are rich in Ca,Mg,Fe,Zn,Mn and other metal elements which are beneficial to human body.Among them,the metal element contents of Shanxi mature vinegar are more balanced.The recovery rates of the improved method are 90% ~110%,the relative standard deviations are less than 2.23%,the detection limits are between 0.006 μg/mL~0.138 μg/mL.The method is convenient,rapid,less reagent consumption,less pollution,accurate,and suitable for the simultaneous determination of multi-metal elements in vinegar.These results can provide scientific basis for protecting geographical indication products,perfecting "fingerprint" characteristic indexs of famous and excellent vinegar products,and guiding rational diet for people.
