摘  要:硒是人类生活中必不可少的微量元素,具有抗癌、抗炎、抗糖尿病、抗阿尔茨海默病以及减少药物毒性和保护心脏的作用。无机硒生物利用率低,安全性差,有机硒蛋白也被认为有低毒性的隐患,近年来研究表明纳米硒是一种具有强大的抗氧化特性、免疫调节活性和高安全性的硒。目前,硒最常用的方法主要包括物理化学合成法以及微生物转化法,前者所得纳米硒粒径大、安全性能差,可能有机物残留,后者所得纳米硒稳定性好,安全性能好,基于此,本文章主要介绍了纳米硒的生物活性及其营养特性,进一步综述了其生物形态及其制备方法,并阐述了纳米硒未来研究与发展的方向。Selenium is an essential trace element in human life with anticancer,anti-inflammatory,anti-diabetic,anti-Alzheimer's disease as well as reducing drug toxicity and cardioprotective effects.Inorganic selenium has low bioavailability and poor safety,and organic selenoproteins are also considered to have low toxicity potential.Recent studies have shown that nanoselenium is a kind of selenium with powerful antioxidant properties,immunomodulatory activity and high safety.At present,the most commonly used methods for selenium mainly include physicochemical synthesis method and microbial transformation method,the former obtained nanoselenium with large particle size,poor safety performance and possible organic residues,the latter obtained nanoselenium with good stability and safety performance,based on this,this article mainly introduces the biological activity of nanoselenium and its nutritional properties,further reviews its biomorphology and its preparation method,and describes the future research and This article introduces the biological activity and nutritional properties of nanoselenium,further reviews its biomorphology and its preparation method,and describes the future research and development direction of nanoselenium.
