摘 要:利用电感耦合等离子体-质谱(ICP-MS)法测定豆制品中的铅、镉、砷、镍、锰、铝、铬、铜、硒。通过分析豆制品中各金属元素含量,总结豆制品污染情况。用粉碎机将样品充分粉碎混匀,以硝酸为消解液进行微波消解。消解后的样品加热挥发脱气,用超纯水定容,利用ICP-MS的碰撞反应池ORS技术和在线引入内标溶液的方法进行检测,通过比较样品质谱信号强度和标准校正曲线的信号强度,对试样溶液中的元素进行定量分析。结果表明,标准校正曲线线性关系良好,相关系数均大于0.998。9种金属的回收率为82.0%~119.9%,相对标准偏差均小于10%。9种金属均有检出,其中铝、锰含量较高。通过微波消解、电感耦合等离子质谱同时检测豆制品中9种元素,前处理方法简便,方法检测灵敏度高,准确度高。抽样检测豆制品中未使用工业氯化镁、硫酸铝钾作为凝固剂和稳定剂,豆制品制作过程中存在稳定剂使用过量现象。Lead,cadmium,arsenic,nickel,manganese,aluminum,chromium,copper and selenium in bean products were determined by inductively coupled plasma mass spectrometry(ICP-MS).By analyzing the content of metal elements in soybean products,the pollution situation of soybean products was summarized.The sample was fully crushed and mixed with a pulverizer,and microwave digestion was carried out with nitric acid as the digestion solution.After digestion,the sample was heated to volatilize and degassed,and the volume was fixed with ultra pure water.The collision reaction cell ORS technology of ICP-MS and the method of introducing internal standard solution on line were used for detection.The elements in the sample solution were quantitatively analyzed by comparing the signal strength of mass spectrometry and the signal strength of standard calibration curve.The results showed that the linear relationship of standard calibration curves was good,and the correlation coefficients were all greater than 0.998.The recoveries of the eight metals were 82.0%-119.9%and the relative standard deviations were less than 10%.Lead,arsenic,chromium,aluminum and manganese were detected,all of which did not exceed the standard.Nine elements in soybean products were determined by microwave digestion and inductively coupled plasma mass spectrometry(ICP-MS).The pretreatment method was simple,sensitive and accurate.Industrial magnesium chloride and aluminum potassium sulfate were not used as coagulant and stabilizer in sampling test,and excessive stabilizer was used in the production process of soybean products.
