摘　　要：柠檬腈是一种具有新鲜柠檬果香气的香料,香气浓郁持久,主要用于花香型和果香型香精的调香,广泛应用于食品和日化领域。本文综述了近年来柠檬腈的研究进展,简述了柠檬腈的特性和应用,重点介绍了柠檬腈的制备工艺,并展望了柠檬腈未来的发展趋势,为柠檬腈的综合开发利用提供理论参考。Citonitrile is a spice with strong and long-lasting fresh lemon fruit aroma.Citonitrile is mainly used to modulate floral and fruity fragrances,and it has a wide range of applications in the field of food and daily chemicals.In this review,the recent advances of citonitrile were introduced.The characteristics and applications of citonitrile were briefly mentioned,and the preparation of citonitrile was emphasized.In addition,the future development trend of citonitrile was prospected.This review may provide theoretical reference for the comprehensive development and utilization of citonitrile.
