摘  要:高糖摄入引起的糖尿病、高血压等疾病严重危害着人类的生命健康,这一形势也促使人们对天然、低热量糖替代品的开发日益关注。作为一种近年发现的具有特殊生理功效的稀少糖,D-阿洛酮糖具有与蔗糖相近的口感及容积特性,被称为食品中蔗糖“理想替代品”。D-阿洛酮糖可以在D-阿洛酮糖3-差向异构酶的催化作用下进行生物合成,已被FDA批准为一般公认安全。D-阿洛酮糖因其优良的性能逐渐成为食品、保健和医疗领域的研究热点。本文综述了D-阿洛酮糖的理化性质、生理功能,及其最新的化学合成和生物制备方法,为D-阿洛酮糖在各大领域的应用做理论铺垫。Diabetes,hypertension and other diseases are highly correlated with high added sugar intake.Therefore,developing natural and low-calorie sugar substitutes becomes an important research topic.As a rare sugar with special physiological effects,D-allulose has a similar taste and volume characteristics to sucrose and is regarded as an ideal substitute for sucrose in processed food.D-allulose can be biosynthesized under the catalysis of D-allulose 3-epimerase.It has been approved by FDA as GRAS.Because of its excellent properties,D-allulose has gradually become a research hotspot in the fields of food,health care and medical treatment.In this paper,the physical and chemical properties,physiological functions,and the latest chemical synthesis and biological preparation methods are reviewed,and the study lays a theoretical foundation for the application of D-allulose in various fields.
