摘  要:为提升酒精计法测酒中乙醇浓度的准确性,研究不确定因素影响下酒精计法测酒中乙醇浓度。依据GB 5009.225—2016《食品安全国家标准酒中乙醇浓度的测定》,分析酒精计法测定白酒中乙醇浓度的不确定因素来源,包括读数偏移、置信度、酒精计校准、温度、重复性偏差、酒精计使用方法、不同中药物质、相对合成等,并对不确定因素来源实施试验,找出主要影响因素,为酒类检验提供更加科学的数据。试验结果表明,读数偏移为最主要不确定因素;酒精计法测酒中乙醇浓度时随着温度的升高,酒精水溶液内乙醇的体积百分比含量会变低,校正系数与乙醇真实浓度成反相关;在95%置信水平下,酒精计法测酒中乙醇浓度误差较大;当同一含醇量下溶解不同比例的溶质时,实际测量乙醇浓度间相差很大。In order to improve the accuracy of alcohol concentration measurement by alcohol meter method,the influence of various uncertain factors was studied.According to national standard GB 5009.225—2016,the uncertainty sources in the measurement of alcohol concentration in Baijiu by alcohol meter were analyzed,including reading deviation,confidence,alcohol meter calibration,temperature,repeatability deviation,usage of alcohol meter,different traditional Chinese herbs,relative synthesis,etc.Tests were carried out to find out the main influencing factors.The results showed that the reading deviation was the main uncertainty factor.With the increase of temperature,the volume percentage of ethanol in the alcohol aqueous solution would decrease,and the correction coefficient was inversely correlated with the true concentration of ethanol.At the 95%confidence level,the error of alcohol meter method in the measurement of alcohol concentration in Baijiu was large.When different proportions of solute were dissolved under the same alcohol concentration,the actually measured alcohol concentration varied greatly.
