摘  要:试验旨在研究发酵杂交构树粉对宁都三黄鸡胸、腿肌发育指数及肉质性状的影响。选取48只体重相近、健康的40日龄宁都三黄鸡,分为2组,每组8个重复,每个重复3只。对照组为基础日粮,试验组为基础日粮+7%发酵构树粉。试验期35 d。结果显示,添加7%发酵构树粉显著降低了三黄鸡胸肌肌纤维直径(P<0.05),有增加腿肌滴水损失率的趋势,显著提高胸肌中豆蔻酸(C14∶0)和十五碳烯酸甲酯(C15∶1)的含量(P<0.05),显著降低十七碳烯酸甲酯(C17∶1)和硬脂酸(C18∶0)的含量(P<0.05);有降低胸肌饱和脂肪酸(SFA)和腿肌亚油酸(C18∶2)含量的趋势。与对照组相比,添加7%发酵构树粉显著提高了胸肌肌肉中甘氨酸(Gly)和胱氨酸(Cys)含量(P<0.05),显著降低了胸肌中脯氨酸(Pro)含量(P<0.05)。研究表明,使用7%发酵构树粉替代部分三黄鸡基础日粮改变了胸肌内部分氨基酸、脂肪酸含量,进而影响了胸部肌肉品质。The experiment was to investigate the effect of fermented hybrid papermulberry powder on breast and leg muscle development and meat quality of Ningdu Sanhuang chickens.Forty-eight 40-day-old Ningdu Sanhuang chickens with similar body weight were randomly divided into two groups,with eight replicates in each group and three chickens in each replicate.The chickens in control group were fed with basal diet,and the chickens in experimental group were fed with basal diet+7%fermented hybrid papermulberry powder.The experiment lasted for 35 d.The results showed that adding 7%fermented hybrid papermulberry powder significantly decreased the muscle fiber diameter of breast muscle(P<0.05),and had an increasing trend for the drip loss rate of leg muscle.Adding 7%fermented hybrid papermulberry powder significantly increased the content of C14∶0 and C15∶1(P<0.05),significantly decreased the content of C17∶1 and C18∶0 in breast muscle(P<0.05),and had a decreasing trend for the content of SFA in breast muscle and C18∶2 in leg muscle.Adding 7%fermented hybrid papermulberry powder significantly increased the levels of Gly and Cys in breast muscle(P<0.05),and significantly decreased the content of Pro in breast muscle(P<0.05).The results indicates that the supplementation of 7%fermented hybrid papermulberry powder to replace part of basal diet can affect the content of amino acids and fatty acids in breast muscle,and then affect the quality of breast muscle.
