摘  要:目的:了解宜春市某农贸市场沙门氏菌污染状况,预防食源性疾病的发生。方法:无菌技术采集农贸市场食物与环境样品,PCR扩增法检测样本中沙门氏菌携带率,分析沙门氏菌污染状况。参考GB 4789.4-2016分离沙门氏菌,计算不同样品沙门氏菌分离率,并进行鼠伤寒沙门氏菌与肠炎沙门氏菌分型鉴定。结果:2020-2021年从宜春市某农贸市场共采集的3批次、5类样本(猪肉、禽肉、水产品、乳制品以及空气环境)合计920份。检出沙门氏菌核酸阳性样品159份(检出率17.28%),其中,生猪肉检出率最高,达34.69%,其次为市场环境样本(11.36%),水产品、禽类、乳制品沙门氏菌检出率依次降低(7.14%、6.67%和4.17%)。从阳性样本中分离、纯化获得沙门氏菌菌株34株,分离率23.27%,其中,肠炎沙门氏菌8株,鼠伤寒沙门氏菌1株。结论:2020-2021年宜春市某农贸市场不同种类的食品与环境中存在不同程度的沙门氏菌污染,并分离到具有潜在致病作用的肠炎沙门氏菌与鼠伤寒沙门氏菌,应引起相关部门重视,强化对农贸市场食品与环境卫生的检测、监测以及监督管理,避免食源性疾病的暴发。Objective:To understand the Salmonella contamination within a farmer’s market in Yichun city and prevent the occurrence of food-borne diseases.Methods:Aseptic technique was used to collect food and environmental samples from the farmer’s market.PCR amplification was performed to detect the Salmonella nucleic acid contamination in the samples.Salmonella strains were also purified and isolated according to GB 4789.4-2016.Further PCR typing and identification of Salmonella typhimurium and Salmonella enteritidis were analyzed.Results:A total of 920 samples,including pork,poultry,aquatic products,dairy products and air environment,were collected from a farmer’s market in Yichun city from 2020 to 2021.There were 159 samples detected as Salmonella positive with a carrier rate of 17.28%.The raw pork was the most easily contaminated food with a detection rate of 34.69%,followed by market environment samples(11.36%),aquatic products(7.14%),poultry(6.67%)and dairy products(4.17%).There were 34 Salmonella strains isolated and purified from the 159 positive detection samples with an isolation rate of 23.27%,including 8 strains of Salmonella enteritidis and 1 strain of Salmonella typhimurium.Conclusion:Different levels of salmonella contamination were found in different types of food and environment in a farmers’market in Yichun city from 2020 to 2021.The strains of major pathogenic serotypes as Salmonella enteritidis and Salmonella typhimurium were also isolated.Relevant departments should pay attention and strengthen the sanitation testing,monitoring,supervision and management to avoid outbreaks of Salmonella associated food-borne diseases.
