摘  要:文章分析了江西连续覆盖3年的毛竹早出笋营养成分含量,结果显示,早出笋中氮、磷、钾元素含量高于毛竹春笋,但还原糖、膳食纤维及矿质元素的含量均低于春笋。覆盖后3年间笋中各营养成分含量的变化趋势表现为:氮元素、还原糖含量先降后升,磷、钾、钙、镁、锌元素含量先升后降,钾元素含量持续下降;笋还原糖和膳食纤维含量与各元素之间均存在一定的相关性,其中与氮、钾、钙、镁、铁元素含量呈负相关关系,而与磷、锌、铜元素含量呈正相关关系。This paper analyzes the nutrient contents in early shoots of moso bamboo that have been mulched continuously for 3 years. The results show that the contents of nitrogen, phosphorus and potassium in early shoots are higher than those in spring shoots, while the contents of reducing sugar, dietary fiber and mineral elements are lower than those in spring shoots. During the 3-year mulching period, various nutrients’ contents follow the change trend: the contents of nitrogen and reducing sugar first decrease and then increase, the contents of phosphorus, potassium, calcium, magnesium and zinc first increase and then decrease, and the content of potassium continues to decrease. There is a certain correlation between the contents of reducing sugar and dietary fiber and various elements, which are negatively correlated with the contents of nitrogen, potassium, calcium, magnesium and iron, but positively correlated with the contents of phosphorus, zinc and copper.
