摘  要:近年来,消费者对食品安全越来越重视。尤其是新冠疫情爆发后,越来越多的人开始关注环境与食品的安全性问题。多环芳烃(polycyclic aromatic hydrocarbons,PAHs)是一种普遍存在于食品、环境中的污染物,是最先发现的具有致癌、致突变的化合物。食品中的PAHs标志物苯并(a)芘(benzo(a)pyrene,BaP)被世界卫生组织列为一类致癌物。因此,食品中多环芳烃含量的准确测定十分关键。通过对食品中多环芳烃的提取及检测方法的研究现状进行调查,介绍了索氏提取法、超声波提取法、超临界流体萃取法、微波辅助萃取等食品中多环芳烃的提取方法;以及气相色谱法、气相色谱-质谱法(GC-MS)、高效液相色谱法(HPLC)等检测方法,比较了HPLC和GC-MS两种国标方法的优劣。期望为建立快速、准确测定食品中多环芳烃的方法提供参考。In recent years,consumers pay more and more attention to food safety.Especially after the outbreak of COVID-19,more and more consumers began to pay attention to the safety of the environment and foods.Polycyclic aromatic hydrocarbons(PAHs)are established as pollutants that widely exist in the environment and foods.They were found as the earliest carcinogenic and mutagenic compounds.Benzo(a)pyrene(BaP),a marker of carcinogen PAHs in food,is classified as the first rank carcinogens(with confirmed carcinogens for human)by World Health Organization(WHO).Therefore,it is vital for the accurate determination of PAHs in food.In this work,the extraction and detection methods of PAHs in food were reviewed.The typical extraction methods such as Soxhlet extraction(SE),Ultrasonic extraction(UE),Supercritical fluid extraction(SFE),and Microwave-assisted extraction(MAE)were introduced.The detection methods such as gas chromatography-flame ionization detector(GC-FID),gas chromatography-mass spectrometry(GC-MS),high-performance liquid chromatography(HPLC),and other detection methods were also reviewed.Lastly,two national standard methods of HPLC and GC-MS were compared.In this way,it is expected to provide benchmark data for researchers aiming to establish a fast and accurate method to determine the PAHs in foods.
