摘  要:为研究微生物发酵饲料(MFF)对生长育肥期莱芜黑猪屠宰性能、血液生化指标、抗氧化性能和肉品质的影响,试验选取64头莱芜黑猪,分为2个处理,分别为微生态制剂添加组和微生物发酵饲料组,每个处理8个重复,每个重复4头猪。结果表明:相比于微生态添加处理组,微生物发酵饲料组莱芜黑猪屠宰率增加2.84%,眼肌面积增加3.04%,背膘厚度降低13.36%(P>0.05)。微生物发酵组莱芜黑猪血液中总蛋白提高5.86%,血液中白蛋白增加2.72%,莱芜黑猪血液中尿素、总胆固醇、高密度脂蛋白、低密度脂蛋白分别降低5.91%、2.83%、8.62%、1.56%(P>0.05),血液中甘油三酯水平显著降低27.91%(P<0.05)。微生物发酵处理组莱芜黑猪肝脏GSH含量显著提高23.83%,十二指肠GSH含量增加110.03%,空肠GSH含量增加50.86%(P<0.05),肝脏GSH-Px活性增加18.74%,十二指肠GSH-Px活性增加23.32%(P<0.05),回肠T-SOD、GSH-Px活性分别增加31.60%、21.82%(P<0.05);肝脏MDA、十二指肠MDA含量、空肠MDA含量、回肠内MDA含量分别降低12.07%、7.69%、9.38%、5.71%。微生物发酵处理组莱芜黑猪pH24降低0.69%,亮度1降低2.68%,亮度24降低2.65%,莱芜黑猪肌肉大理石纹增加4.26%,肌内脂肪增加4.20%(P>0.05)。综上,微生物发酵饲料能通过提高机体抗氧化性能,改善脂肪代谢来增加屠宰性能和改善肉品质。The purpose of this research was to investigate the effects of microbial fermented feed(MFF) on slaughter performance,blood biochemical parameters,antioxidant capacity and meat quality of Laiwu black pigs in growing-fattening period. A total of 64 Laiwu black pigs with similar weight were randomly divided into 2 treatments,one treatment was microbial(probiotics) addition group,and the other was microbial(probiotics) fermented feed group. Each treatment includes 8 replicates and 4 pigs per replicate. The results showed that compared with microbial treatment,MFF could increase the slaughter rate by 2.84%,increase loin eye area by 3.04% of Laiwu black pigs,and reduce the back fat thickness by 13.36%(P > 0.05). MFF increased the contents of total protein by 5.86% and albumin by 2.72%(P > 0.05),decreased the contents of urea,total cholesterol,high density lipoprotein and low density lipoprotein by 5.91%,2.83%,8.62%,1.56%(P> 0.05),and decreased the contents of triglyceride by 27.91% in blood of Laiwu black pigs(P < 0.05).Compared with microbial treatment,MFF treatment increased the content of GSH in liver by 23.83%,in duodenum by 110.03%,in jejunum by 50.86% of Laiwu black pigs(P < 0.05);increased the activity of GSHPx in liver by 18.74%,in duodenum by 23.32%,in ileum by 21.82% of Laiwu black pigs(P < 0.05);increased the activity of T-SOD in ileum by 31.60% of Laiwu black pigs(P < 0.05);decreased content of MDA in liver by 12.07%,in duodenum by 7.69%,in jejunum by 9.38% and in ileum by 5.71% of Laiwu black pigs(P > 0.05). MFF could reduce pH_(24) by 0.69%,brightness 1 by 2.68%,brightness 24 by 2.65% of meat(P > 0.05),increase marbling by 4.26% and intramuscular fat by 4.20% of Laiwu black pigs(P > 0.05).In conclusion,MFF could improve the antioxidant capacity and ameliorate fat and protein metabolism of the body to increase slaughter performance and improve meat quality.
