摘  要:目的制备没食子多酚和Fe^(Ⅲ)的复合薄膜并评估其体外抗氧化活性。方法通过纳米包封技术-层层自组装法,将没食子多酚和Fe^(Ⅲ)制备薄膜,利用紫外-可见分光光度计(UV-Vis)、傅里叶变换红外光谱仪(FTIR)和扫描电子显微镜(SEM)对薄膜进行表征;采用控制变量法讨论温度、pH和离子强度对薄膜形成过程的影响;使用DPPH·和ABTS;评价其体外抗氧化能力。结果 UV-Vis表征说明薄膜的厚度与其层数呈正相关;FTIR结果显示薄膜中存在没食子多酚的酚羟基和Fe^(Ⅲ)结合的特征吸收峰,表明两者可结合在薄膜中;SEM显示薄膜表面分布着大小均一的球形粒子。对于影响因素实验,薄膜的形成与pH值和温度成负相关,与没食子多酚的浓度成正相关。体外抗氧化活性实验显示,薄膜可以清除DPPH·和ABTS;自由基。结论层层自组装法能成功制备没食子多酚和Fe^(Ⅲ)的复合薄膜,且薄膜具有较好的抗氧化活性。Objective To prepare films with Turkish galls polyphenols and Fe^(Ⅲ) and evaluate the antioxidant activity in vitro. Method Preparing the films with Turkish galls polyphenols and Fe^(Ⅲ) by layer-by-layer self-assembly method.The films were characterized by UV-Vis, FTIR and SEM.The effects of temperature, pH and ionic strength on the film formation process were discussed by control variable method.DPPH· and ABTS;were used to evaluate the antioxidant activity in vitro. Results The characterization of UV-Vis showed the thickness of the film was positively correlated with the number of layers;FTIR results showed that there were characteristic absorption peaks of Turkish galls polyphenol phenolic hydroxyl and Fe^(Ⅲ) in the film, indicating that they could be combined in the film;SEM showed that spherical particles with uniform size were distributed on the surface of the film.For the experiment of influencing factors, the formation of film was negatively correlated with pH and temperature, and positively correlated with the concentration of Turkish galls polyphenols.In vitro antioxidant activity test showed that the films could scavenge DPPH· and ABTS;.Conclusion The film can be prepared with Turkish galls polyphenol and Fe^(Ⅲ) by layer-by-layer self-assembly method and the film has good antioxidant activity.
